Instructions

Prepare the pan:
Preheat your oven to 350°F (175°C). Grease a 20-cup mini muffin tin thoroughly.
Mix dry ingredients:
In a large bowl, whisk together flour, baking powder, baking soda, salt, and 1/2 cup sugar. Stir in sprinkles.
Combine wet ingredients:
In a separate bowl, whisk melted butter, eggs, milk, and vanilla extract until smooth.
Combine wet and dry:
Pour wet ingredients into dry ingredients. Gently fold together until just combined (do not overmix).
Fill muffin tin:
Fill each mini muffin cup about 3/4 full with batter.
Bake:
Bake for 16–18 minutes, or until a toothpick comes out clean and tops are lightly golden.
Make cinnamon sugar:
While muffins bake, mix 1/4 cup sugar and cinnamon together in a small bowl.
Coat muffin pops:
Let muffins cool in the tin for 5 minutes, then carefully remove. While still warm, brush each muffin pop with melted butter, then roll in cinnamon sugar mixture.
Serve:
Insert a lollipop stick or skewer into each muffin, if desired. Serve warm or at room temperature.
