Ingredients
- Dry Ingredients: 2 1/4 cups (280 g) all-purpose flour, 2 tsp ground ginger, 1 tsp ground cinnamon, 1/4 tsp ground cloves, 1/4 tsp ground nutmeg, 1/2 tsp baking soda, 1/2 tsp baking powder, 1/4 tsp fine sea salt, 2 tbsp instant espresso powder
- Wet Ingredients: 3/4 cup (170 g) unsalted butter, softened, 1 cup (200 g) packed brown sugar, 1/4 cup (60 ml) molasses, 1 large egg, 1 tsp pure vanilla extract
- For Rolling: 1/4 cup (50 g) granulated sugar
Instructions
- Step 1:
- Preheat oven to 350°F (175°C) Line two baking sheets with parchment paper
- Step 2:
- In a medium bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, baking powder, salt, and espresso powder
- Step 3:
- In a large bowl, cream the softened butter and brown sugar until light and fluffy, about 2 3 minutes
- Step 4:
- Beat in the molasses, egg, and vanilla extract until well combined
- Step 5:
- Gradually add the dry ingredients to the wet mixture, mixing just until incorporated
- Step 6:
- Scoop tablespoon-sized portions of dough and roll into balls Roll each ball in granulated sugar to coat
- Step 7:
- Place dough balls 2 inches apart on prepared baking sheets
- Step 8:
- Bake for 9-11 minutes, until edges are set and tops are crackled

- Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely
