# Step-by-Step Guide:

01 - Preheat oven to 400°F. Toss cubed butternut squash with 1 tablespoon olive oil, salt and pepper. Spread evenly on a baking sheet and roast for 25 minutes until golden and tender.
02 - While squash roasts, heat remaining olive oil in a large pot over medium heat. Add diced onion and chopped carrots; cook for 5-7 minutes until softened and fragrant.
